Entrepreneur Kamal Shkoukani Brings ‘Hot Chicken’ To Milwaukee’s First Ghost Kitchen
Kamal Shkoukani is a chef and entrepreneur based in Milwaukee, Wisconsin.
He founded Paper Table Food Company, a virtual restaurant in Milwaukee’s first digital food court. The facility comprises 10 “ghost kitchens,” virtual restaurants that fill meal orders through digital sales. Seven of the kitchens in the facility are operated by Shkoukani. He opened the shop in November 2020 and worked inside the maze of hallways and backrooms from a tiny 250-square-foot kitchen. The restaurant offers a variety of cuisines, including Halal chicken waffles, hot chicken, burgers, Middle Eastern bowls, cakes, and contemporary Middle Eastern teas.
