Jerry Mai Takes the Helm at St Cloud Eating House with a Fusion of Vietnamese and Cambodian Flavors

Jerry Mai, a renowned chef celebrated for her ventures such as Pho Nom and Bia Hoi, has embarked on a new culinary journey as the consultant chef at St Cloud Eating House in Hawthorn East, Melbourne. Known for her vibrant Vietnamese cuisine, Mai is set to infuse the menu with Cambodian influences, a nod to her heritage and her parents’ culinary background in Cambodia. St Cloud, established by James Klapanis in 2015, welcomes Angie Giannakodakis, a veteran of The Press Club and co-owner of Epocha, as its new general manager.

Mai plans to introduce communal meals featuring family recipes, such as fried whole snapper with green mango salad, grilled rump cap with lettuce wraps, and a pork belly dish inspired by the Vietnamese caramelized pork and egg dish that kho. The menu will also boast creative items like lamb ribs with tamarind caramel, grilled scallops with wild onion butter dip, twice-cooked duck leg with Davidson’s plum caramel fish sauce, and beef cheek green curry.

To complement these dishes, St Cloud is curating a selection of light Asian beers and spiced-up classic cocktails, including a makrut lime Margarita and a lemongrass Pina Colada. Mai’s innovative culinary direction promises an exciting dining experience, inviting patrons to “buckle up” for the flavors ahead.
