The Ex-Banker Running Three Street Food Concepts From One Kitchen | Dark Kitchens
Marcio Coelho traded standing orders for, well, standing and giving orders.
You can associate many things with bankers, be it a sharp pinstripe suit, watching Bloomberg while running on a treadmill, or just shouting “Sell!” into a phone for some reason I’ll never fully understand.
One thing you probably wouldn’t associate with bankers, though, is food unless it’s a plate of caviar and some Bollie at a ‘meeting’ in the City on a Friday afternoon.
But one man has changed all that, throwing off 15 years as a banker in London to follow a passion for food and pursue his dreams of owning and operating restaurants.
That man is Marcio Coelho, and with the help of his family, wife Cristina, and daughter Andrea, he launched the fantastic KBOM Bar & Kitchen at Hatch at the tail end of 2019, offering a combination of authentic Portuguese and Brazilian dishes right there under the Mancunian Way.
A dark kitchen and a ghost kitchen are similar in that they are both used for food preparation and delivery, but they are not the same. A dark kitchen, also known as a cloud kitchen or virtual kitchen, is a commercial kitchen used to prepare food specifically for delivery through food delivery apps. These kitchens may not have a physical storefront or dine-in options.
A ghost kitchen, also known as a virtual kitchen or cloud kitchen, is a commercial kitchen used to prepare food specifically for delivery through food delivery apps and does not have a storefront or dine-in options. The term “ghost kitchen” sometimes refers to a dark kitchen that operates under a different name or brand than the restaurant that prepares the food.
